Before going to the hospital for an operation, a neighbor picked all the ripe produce in her garden and brought it over to me so it wouldn’t go to waste.
She piled cabbage leaves into my arms, along with a big bag of persimmons in various shades of yellow, orange & green, while issuing a torrent of instructions (in Portuguese, of course) for what I should do with it all.
Two of the words I did understand were “caldo” and “verde” – Portuguese green soup.
Being me, I’d rather just draw a picture of what she gave me. And so, I did, displaying it on the tall teak bistro table in my outdoor kitchen, in front of the fireplace.
But then a friend kindly messaged me a recipe for Caldo Verde, the hearty potato and kale soup from northern Portugal that’s made in a single pot.
“This is one of those dishes that seem custom-made for lazy rainy days,” the writer promises, “when you want something hearty and comforting but don't feel like putting in a ton of effort.”
